info.xml: cleanup redundant compatibility versions

Starting CiviCRM 5.0, it's not required to set compatibility for each 5.x version. You should set only the minimum 5.x version supported.

Because of the numerous versions, it looks a bit weird on civicrm.org, giving the impression that development has stalled or that it does not support the latest 5.x:
