Standalone install guide updates

This is a first pass of updating the Standalone instructions now that the release tarball is "the happy path".

I have removed some of the more complex stuff for composer / git installs. I think these belong on a separate page for the keen beans.

I would be grateful for any pointers on creating a new docs page... or any other documentation update pointers for that matter, as it's new to me!
