Document schema table-field-usage element

The "usage" tag was added to the schema in 5.61 via https://github.com/civicrm/civicrm-core/pull/25874

I'm not totally clear on what each of the subtags does -- particularly 'token', which I can't find a reference to anywhere else in the code. Reviewers, please clarify if you can.
