I assume this is all because SearchKit wasn't as far along when this last release was made? A few months ago it became an issue on the front end too - and I've been unable to narrow it down.
However, following some advice from Stack Overflow, I've tried disabling Haystack and that resolves the issue.
I've tried deleting and reinstalling Haystack too but no joy.
Without Haystack:

We've removed Haystack for now but would like to restore our styles wither with an updated Haystack or something else.
Any ideas what might be the issue? Can you suggest anything to debug?
We've cleared caches/restarted fpm/etc. This issue has persisted for about 6 months. I realised last week that it is due to the responsiveness so if I make my screen smaller they appear again. I will make screenshots.
So it begins like so:

but when I zoom it becomes:

This is caused by the `text-indent: -20px` on that datatable.
