Update Contribution Payment Instrument Id to match first payment when the status is Pending

If we are asking people to create a pending Order they may not know the payment instrument at that time. We should adjust Payment.Create to update it when a payment comes in & it is the first one.

(Alternatively we could always update it so it becomes the latest - probably an edge case)
