#2242 Ensure that when a custom field is deleted any associated mapping field records are also deleted to avoid DB errors when doing exports

The $serializeArrays parameter was transitional and is now always enabled.
Passing $params by reference was unnecessary and has been removed.
Renamed a few variables for readability.

buildMappingForm is now only used by Search Builder

At this point we are converting to the mapping format AFTEr the function receives the fields but
changing that is the next step

Janky but in the right direction. The phoneType & imProvider stuff looks nasty but not more nasty

The getMappingFields function is confusing - it turns out we just need an array of names

Improves compliance with drupal standard
